Cabbages can be key to a healthy diet

Coleslaw makes for a great side dish or a snack to keep you going through the busy day.  To ensure you get the highest quality products, we preserve the nutrients in our cabbages. This means you can enjoy our delicious coleslaw as part of a healthy and balanced diet.

Raw cabbages are naturally nutrient-rich, yielding high amounts of vitamins C and K! They’re also full of fibre, which is great for digestion.

 

Vital vitamin C

You can get 60% of your daily value of vitamin C from 100 grams of cabbage. This essential vitamin serves numerous important roles in the body. 

Also known as ascorbic acid, vitamin C helps the body absorb non-heme iron. These irons are found in plant foods such as spinach, lentils and potatoes (and our humble cabbage!). Those with diets lacking in iron can find themselves low on energy and lethargic – not ideal for a busy day!

Vitamin C is also needed to make collagen. This protein provides structure to the skin and is essential for the function of bones, blood vessels and muscles.

This versatile vitamin is an incredibly powerful antioxidant, protecting the body from damage-causing free radicals. Many scientists have embarked on a mission to find out more about vitamin C’s potential cancer-fighting properties. Although more research is needed, it’s clear that vitamin C is needed to help the body perform to its best.

 

Vitamin K

Vitamin K is found in abundance in raw cabbage (over 90% of your daily value in 100 grams). It has several benefits, one of which is to help the blood clot. Without efficient blood clotting, a minor injury can result in death through excessive bleeding!

There also appears to be a correlation between osteoporosis, a condition where bone density decreases resulting in weaker bones, and low intake of vitamin K.  Some studies suggest that vitamin K helps decrease the risk of fractures – although further research is needed to confirm this.

 

A multitude of minerals

Raw cabbage also contains small amounts of minerals, which all contribute to a healthy diet. Calcium, iron, magnesium, manganese and potassium are all present amongst others.

Each mineral has its own role to play in supporting the body’s many functions. From helping your immune system fight off illnesses and infections to transporting oxygen around the body, it’s essential to include these minerals in your diet.

  • For those on paleo or low-carb diets, cabbage can substitute for rice or noodles. 
Shred or chop it in the food processor and sautué or braise briefly in broth or another flavorful liquid of your choice, then use it as a base for your sauce or proteins.

  • Coleslaw is an all time classic!

The first coleslaw recipe can be traced back to 1770, in the cooking book The Sensible Cook: Dutch Foodways in the Old and New World. 
The author attributes the recipe to his Dutch landlady. She mixed thin strips of cabbage with melted butter, vinegar and oil.
